Savory Pumpkin Butter Board

Ingredients

  • 8 Oz two sticks top quality unsalted butter
  • ¼ cup canned pumpkin
  • 1 head roasted garlic recipe below
  • 2 tsp flaky sea salt such as Maldon
  • 1 Tbsp pure maple syrup
  • 2 Tbsp fresh Rosemary sprigs
  • Sliced sourdough bread crackers, and crudités like cauliflower, endive, and carrot to serve

Instructions

  • Bring good quality unsalted butter to room temperature and place in a medium bowl.
  • Add canned pumpkin and use a spatula to combine.
  • Using an offset spatula, spread the pumpkin butter on your board.
  • Scoop the roasted garlic cloves from their shell using an offset spatula and spread on the butter (no need to over spread: little pockets of roasted garlic look beautiful and taste delicious!).
  • Sprinkle with fresh Rosemary sprigs.
  • Drizzle with pure maple syrup.
  • Sprinkle with flaky sea salt.
  • Serve with bread, crackers, and crudités.
  • Serve, swoop, and enjoy!

Notes

For the roasted garlic: 
  • 1 head garlic
  • 2 tsp olive oil
  • ¼ tsp salt
Instructions 
  1. Preheat oven to 375.
  2. Slice the top of the head of garlic off using a sharp knife. You won’t to keep the bulb intact, removing just the top of each close of garlic. 
  3. Place on a piece of time foil and drizzle with olive oil. Sprinkle with salt.
  4. Wrap head of garlic in foil, pinching the foil at the top. Place on a baking sheet and bake for 45 minutes to 1 hour until garlic is roasted, fragrant, and closes are tender when pierced. 
  5. Allow to cool before squeezing cloves of garlic from their shell to use.
