Never have I ever titled a recipe such as this. But I’ll be honest: I can’t think of a better way to introduce this recipe.

Admittedly, I shared a very similar recipe to this one a couple weeks ago as part of my Mom’s Kitchen Memoirs story. You see, “Amaretto Creams” were always a special treat in our house, and one that signified celebration. In my adulthood, for whatever reason, I haven’t made them much myself. Maybe that’s my inner child protesting that “no one but Mom should be making them”, but we’ll just tell her to sit down for now.

It wasn’t until I spent the day in the kitchen with my mom and we made these together (ok, she totally made them solo), that I realized, “Hmm. This has the basic components of ice cream. Sure, the cream cheese is different, but I love them this much: why don’t I make this in to ice cream?!”

And thus, your new favorite ice cream was born.

3 Ingredients Is All It Takes

Traditionally, Amaretto Creams are made by mixing together cream cheese, Amaretto, and whipped cream. That’s it.Yep! So simple! My mom would then freeze this mixture in to mini disks and serve fresh berries on top of them.

But in exploring how to make this in to ice cream, I thought a mixed berry sauce could be nice. Although then I’d have to store that sauce in the refrigerator, and spoon it over individual bowls. Wait! What if I swirled a mixed berry reduction in to the ice cream itself? GENIUS!

And I’m not going to lie…it really is.

No Special Equipment Needed

I have some recipes that require the use of an ice cream maker. I am fully aware that not everyone has an ice cream maker, and some may already be scoffing at the idea of making their own homemade ice cream.

“Why would I do that when I can just go buy some?”

“Too much work. Too little time.”

“I don’t even know how to make scrambled eggs. Really?!”

You guys. No special equipment needed. We’re mixing just three ingredients for the base, throwing some fresh berries in a pot with some lemon juice and sugar, and then mixing these two things together. I promise you – you can do this!

And to be honest: there is nothing that tastes like this ice cream. Nothing.

Amaretto Ice Cream with Mixed Berry Swirl

Ingredients

For the Mixed Berry Swirl:

  • 1 1/2 cups mixed berries, such as raspberries, strawberries, blackberries, and blueberries
  • 1 lemon, juiced
  • 1/4-1/2 cup sugar, or sweetener of your choice
  • Pinch salt

For the Amaretto Ice Cream:

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup amaretto
  • 1 cup heavy whipping cream

Instructions

For the Mixed Berry Swirl:

  • In a medium saucepan set over medium heat add all ingredients, stirring to combine.
  • Continue stirring, gently pressing berries as they begin to get juicy and liquid is releasing. Continue doing this until mixture is reduced by at least half: you'll really want this mixture thick.
  • Once mixture is reduced, strain to remove seeds from the berries. Cool this mixture completely until ready to assemble ice cream.

For the Amaretto Ice Cream:

  • In a large bowl, combine cream cheese, sugar, and amaretto, mixing with a handheld mixer to combine.
  • In another large bowl, whip heavy cream until stiff peaks form. Fold in to cream cheese mixture.
  • Spread a layer of the ice cream mixture about 1/2 inch thick on the bottom of a loaf pan. Drizzle the mixed berry swirl over this layer, followed by another layer of ice cream. Continue layering until both mixtures are gone.
  • Cover loaf pan with foil and allow to freeze at least 6 hours.

  1. Oh my! I used cream cheese, French vanilla pudding , vanilla and heavy whipping cream. Served it with Blueberry Balsamic vinegar drizzled in … YUMMY
