What Is Nice Cream?

Nice cream: ever heard of it? It gets its kind name from the fact that while it may resemble the sweet treat that so many love, it actually includes no added sugar, no dairy, and is healthy. Yes, healthy “ice cream”!

Nice cream can easily be defined as frozen fruit (primarily bananas for their creaminess), that are blended with a small amount of liquid, yielding a light, creamy treat. Depending on how much liquid is added, the mixture can be close to the texture of soft serve. Of course, the less liquid that is added, the thicker the mixture will be.

    

Flavoring Nice Cream

While nice cream doesn’t need much to be delicious, there are so many ways you can make it your own:

  • Sprinkle with toasted nuts, coconut, or chocolate chips
  • Add other frozen fruit like strawberries, mango, or pineapple
  • Drizzle with something drippy like nut butter, cocoa “magic shell” (coconut oil + cocoa powder!), honey, or maple syrup

In this delectable version I use a classic flavor that is combined with banana on the regular: peanut butter.

Peanut Butter Banana Nice Cream

This Peanut Butter Banana Nice Cream is the perfect light treat. Frozen bananas and melty peanut butter are combined in this 3 ingredient delicious and light dessert.

Ingredients

  • 4 bananas, sliced
  • 1 Tbsp almond milk
  • 2 Tbsp peanut butter, melted in the microwave

Instructions

  • Add sliced bananas to a wax paper lined baking sheet. Freeze for at least 4 hours, until frozen. You can easily freeeze these in advance, and store in a container in the freezer!
  • When ready to make, add frozen bananas to a food processor. Add 1 tablespoon of almond milk, and blend to combine. Depending on how frozen your bananas are, you may need to add more almond milk. You can always add more, so use a light hand! Otherwise, your nice cream will be more similar to soft serve.
  • Drizzle in melted peanut butter and pulse a couple times to swirl the peanut butter.
  • You can enjoy now, or freeze for an additioanl hour to shift the texture to more ice cream-like.
