When it comes to simple, flavorful, and delicious weeknight meals, I would bet that a fancy Mediterranean steamed meal does not come to mind first. Well guess what?! I’m here to prove that with a handful of ingredients, you can make an exquisite Neil that will transport you two the sun soaked shores of Spain.

How To Make Spanish Spiced Grilled Chicken

Boneless skinless chicken breast has a reputation for being the protein choice of the uninspired. How many boneless skinless chicken breast recipes do you have on your Pinterest board?! I get it. If I’m looking for an easy meal while simultaneously lacking inspiration, I head to my boards for a simple idea.

Bone-in and skin-on chicken is a great option too, but with the added flavor that comes with it, you lose the time saving benefits. Boneless skinless chicken breasts can be a great option when you want a fast meal. With this Spanish Spiced Grilled Chicken, the key is the marinade. The longer the chicken sits in the marinade, the more flavor is infused. However, this one packs such a flavor punch, you’ll get mouthwatering results in just 30 minutes! 

What's In The Marinade

This marinade combines a few Spanish ingredients that deliver incredibly flavorful results. Here’s what you’ll need to make this delectable marinade!

  • Olive oil
  • Sherry Vinegar
  • Parsley
  • Lemon Juice
  • Smoked Paprika
  • Saffron
  • Salt

This recipe makes enough marinade to liberally coat 1 pound of chicken breast, but you can adjust the amounts if you’re feeding a larger crew! As previously mentioned, you’ll get a great flavor out of this marinade with just 30 minutes of rest time, but you can marinate it for up to 12 hours in advance.

How To Serve Spanish Spiced Grilled Chicken

To capitalize on the Spanish theme, I love serving these Spanish spiced chicken breasts with saffron rice studded with olives and of course, rosé! You could also opt to chop up the chicken and add it to a mixture of saffron rice, shrimp, and peas for a shortcut paella!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup olive oil
  • 1/3 cup sherry vinegar
  • 1/4 cup fresh parsley
  • 1 Tbsp lemon juice (from half of a lemon)
  • 2 tsp smoked paprika
  • 1/2 tsp coarse salt
  • 1/4 tsp chili powder , more to your liking
  • 1 generous pinch saffron
  • 1 bay leaf

Instructions

  • In a large bowl, combine all ingredients except chicken and bay leaf. Whisk completely to combine.
  • Add chicken, tossing to coat. Nestle bay leaf into the marinade. Marinate chicken for 30 minutes.
  • Heat grill to 400 degrees. Grill chicken until cooked through, about 4 minutes per side. Serve with saffron rice or your favorite grilled vegetables.
